Instructions

  1. Preheat oven to 350°F (175°C). Grease a mini muffin pan or donut pan lightly with cooking spray, or line with silicone liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg until combined and free of lumps.
  3. In a separate medium bowl, whisk the pumpkin puree, sugar, oil, egg, vanilla extract, and milk until smooth and uniform.
  4. Pour the wet ingredients into the dry ingredients. Gently fold them together with a spatula until just combined; do not overmix.
  5. Spoon or pipe the batter into the prepared pan, filling each cavity about 3/4 full.
  6. Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean and the donuts spring back when lightly touched.
  7. Remove from oven and let cool in the pan for 5 minutes, then transfer to a wire rack to cool for another 10 minutes.
  8. Mix the coating sugar and cinnamon in a shallow bowl. While donuts are still slightly warm, roll them in the mixture to coat evenly.
