  • 8 slices deli ham (Black Forest or honey ham)
  • 1/4 cup finely shredded lettuce (optional, patted dry)
  • For the optional dipping sauce:
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • Pinch of smoked paprika

Instructions

  1. Whip the cream cheese mixture: In a medium bowl, combine softened cream cheese, ranch seasoning mix, and Dijon mustard. Beat with a hand mixer on medium speed for about 2 minutes until light, fluffy, and smooth.
  2. Prep your tortillas: Lay tortillas flat on a cutting board. If stiff, microwave between damp paper towels for 10 seconds, then pat dry.
  3. Spread the cream cheese mixture: Spread about 2 tablespoons of the mixture evenly over each tortilla, leaving a 1-inch border around the edges.
  4. Layer the cheese and ham: Place 2 slices of provolone over the cream cheese on each tortilla, slightly overlapping if needed. Layer 2 slices of ham on top. If using lettuce, sprinkle it evenly over the ham. Press down gently.
  5. Roll it up tight: Starting at the edge closest to you, roll the tortilla away from you as tightly as possible without tearing. Press the seam to seal.
  6. Wrap and chill: Tightly wrap each rolled tortilla in plastic wrap, twisting the ends. Refrigerate for at least 30 minutes, or up to 24 hours.
  7. Slice and serve: Unwrap chilled rolls, trim off ragged ends (about 1/2 inch from each side), then slice into 1-inch pinwheels. Use a gentle sawing motion with a sharp knife.
