Ingredients

Scale
  • 1 box (18.3 ounces / 520 grams) fudge brownie mix
  • 2 large eggs
  • 1/2 cup (120 ml) vegetable oil
  • 1/4 cup (60 ml) water
  • 8 ounces (226 grams) cream cheese, softened
  • 1/2 cup (60 grams) powdered sugar
  • 1 teaspoon (5 ml) vanilla extract
  • 1 cup (240 ml) heavy cream, cold
  • 2 tablespoons (30 grams) granulated sugar
  • 1 pound (450 grams) fresh strawberries, hulled and sliced
  • 1 cup (150 grams) fresh blueberries
  • 1 cup (150 grams) green grapes, halved lengthwise
  • 2 to 3 kiwis, peeled and sliced into half-moons
  • 1 cup (200 grams) pineapple chunks
  • A few sprigs mint leaves (for star on top)
  • 10 to 12 pretzel sticks (for tree trunk)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on two sides.
  2. In a large bowl, combine brownie mix, eggs, oil, and water. Stir until just combined. Pour into prepared pan and spread evenly. Bake for 20 to 22 minutes, until a toothpick inserted in center comes out with moist crumbs. Cool completely (refrigerate for 20 minutes to speed up).
  3. In a medium bowl, whip cold heavy cream and granulated sugar with a hand mixer on medium-high until stiff peaks form, about 3 to 4 minutes.
  4. In a separate large bowl, beat softened cream cheese with powdered sugar and vanilla extract until smooth, about 2 minutes. Gently fold in whipped cream with a spatula until smooth and fluffy.
  5. Lift cooled brownie from pan using parchment. Place on serving platter. Cut into a Christmas tree shape (triangle with slightly rounded bottom). Save scraps for another use.
  6. Spoon cream cheese mixture into a piping bag or zip-top bag with corner snipped. Pipe onto brownie tree in a zigzag pattern, covering completely. Alternatively, spread with a spatula.
  7. Decorate with fruit: place a mint leaf or star-shaped pineapple piece at top. Arrange strawberries, blueberries, kiwi slices, and grapes in rows like ornaments, pressing gently into dip.
  8. At bottom, arrange pretzel sticks in a fan shape for the trunk, pressing into dip.
  9. Chill platter in refrigerator for at least 30 minutes before serving. Serve with extra pretzels, graham crackers, or fruit on the side.

Notes

Don’t overbake brownies; they should be fudgy. Soften cream cheese properly to avoid lumps. Use a serrated knife for clean tree shape. Let dip set for 15 minutes before adding fruit for better hold. For best presentation, add fresh fruit just before serving.
