  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar

  • 2 large eggs, room temperature
  • 1 cup pumpkin puree (100% pure, not pie filling)
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar (for coating)
  • 2 teaspoons ground cinnamon (for coating)
  • Optional: pinch of nutmeg or cardamom

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners and lightly grease them.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, granulated sugar, and brown sugar until combined and free of lumps.
  3. In a medium bowl, whisk the melted butter, eggs, pumpkin puree, and vanilla extract until smooth and creamy.
  4. Pour the wet ingredients into the dry ingredients. Use a spatula to fold them together until just moistened. Do not overmix; the batter should be thick and lumpy.
  5. Divide the batter evenly among the 12 muffin cups, filling each about 2/3 full.
  6. Bake in the center of the oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the tin for 5 minutes, then transfer to a cooling rack.
  8. While the muffins are still warm, mix the coating sugar and cinnamon. Roll each muffin in the mixture to coat evenly.

Notes

Do not use pumpkin pie filling; use 100% pure pumpkin puree. Do not overmix the batter to avoid tough muffins. For best results, use room temperature eggs and butter. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
