  • 1 pound (450 g) large shrimp, peeled and deveined
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup (240 ml) half-and-half or heavy cream
  • ½ cup (120 ml) low-sodium chicken broth
  • ½ cup (50 g) freshly grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 1 teaspoon Italian seasoning or a mix of dried basil and oregano
  • Fresh parsley, chopped (for garnish and color)

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 ounces (225 g) of pasta and cook according to package instructions (usually about 9-11 minutes) until al dente. Reserve ½ cup (120 ml) of the pasta water before draining.
  2. While the pasta cooks, season the shrimp with salt and pepper. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add shrimp in a single layer and cook 2-3 minutes per side until pink and opaque. Remove shrimp to a plate and set aside.
  3. In the same skillet, lower heat to medium and add 2 tablespoons unsalted butter. Once melted, add 4 cloves minced garlic and sauté for about 1 minute until fragrant but not browned.
  4. Pour in 1 cup (240 ml) half-and-half and ½ cup (120 ml) chicken broth, stirring to combine. Let it simmer gently for 2-3 minutes to thicken slightly.
  5. Stir in ½ cup (50 g) freshly grated Parmesan cheese and 1 teaspoon Italian seasoning. If the sauce is too thick, add reserved pasta water a little at a time until desired texture is reached. Taste and adjust salt and pepper.
  6. Return cooked shrimp to the skillet, then add drained pasta. Toss everything together gently to coat in the sauce. Heat through for 1-2 minutes.
  7. Remove from heat and sprinkle with freshly chopped parsley. Serve immediately.

Notes

Do not overcook shrimp to avoid rubbery texture. Reserve pasta water to adjust sauce consistency. Sauté garlic until fragrant but not browned to prevent bitterness. Use fresh Parmesan for best flavor and melt. Reheat leftovers gently in a skillet with a splash of water or broth; avoid microwaving.
