  • 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
  • 1 can (14 ounces) artichoke hearts, drained and chopped
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Prep your slow cooker: Place a small trivet or folded kitchen towel at the bottom of a 6 to 7-quart slow cooker. Add about 1 cup of warm water to the bottom.
  2. Prepare the Cheesy Queso Dip: In a medium mixing bowl, combine cubed Velveeta cheese, undrained Rotel tomatoes, whole milk, ground cumin, garlic powder, and cayenne pepper (if using). Stir until evenly distributed. Transfer to a ramekin.
  3. Assemble the Buffalo Chicken Dip: In a separate bowl, combine shredded chicken, softened cream cheese, buffalo wing sauce, ranch dressing, and shredded cheddar cheese. Stir until well incorporated. Fold in crumbled blue cheese (if using). Transfer to a second ramekin.
  4. Make the Spinach Artichoke Dip: In a third bowl, combine squeezed-dry spinach, chopped artichoke hearts, softened cream cheese, sour cream, mayonnaise, mozzarella cheese, Parmesan cheese, minced garlic, black pepper, and red pepper flakes (if using). Mix thoroughly. Transfer to a third ramekin.
  5. Arrange the three filled ramekins in the slow cooker so they sit evenly without touching each other.
