  • 1/2 cup pure honey

  • 4–5 cloves fresh garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp apple cider vinegar
  • 1 tsp cornstarch mixed with 2 tbsp cold water (slurry)
  • 1/2 tsp red pepper flakes (optional)
  • 2 green onions, sliced (for garnish)
  • Salt and black pepper to taste (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels and place them in the bottom of a 4- to 6-quart slow cooker in a single layer.
  2. In a medium bowl, whisk together the honey, soy sauce, minced garlic, grated ginger, apple cider vinegar, and red pepper flakes until smooth.
  3. Pour the sauce over the chicken thighs, ensuring each piece is evenly coated.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender.
  5. Remove the chicken from the slow cooker and set aside on a plate.
  6. Stir the cornstarch slurry into the hot sauce in the slow cooker.
  7. Cover and cook on high for an additional 15-20 minutes, stirring occasionally, until the sauce thickens.
  8. Return the chicken to the slow cooker and toss to coat in the thickened sauce.
  9. Garnish with sliced green onions and serve hot over rice, noodles, or vegetables.

Notes

Use boneless, skinless chicken thighs for the juiciest results; chicken breasts may dry out. Ensure the cornstarch is mixed with cold water to prevent clumping. For a gluten-free version, substitute soy sauce with tamari or coconut aminos. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
