This easy crockpot soup with five ingredients or less is a hearty, flavorful meal that comes together in minutes. Italian sausage, frozen tortellini, and a rich broth create a comforting soup that’s perfect for busy weeknights.

  • 1 lb Italian sausage (mild or spicy, casings removed)
  • 1 lb frozen cheese tortellini
  • 14.5 oz canned diced tomatoes (undrained)
  • 4 cups low-sodium chicken broth
  • 3 cups fresh baby spinach
  • Optional: grated Parmesan cheese and red pepper flakes for serving

Instructions

  1. Brown the sausage: Heat a large skillet over medium-high heat. Add the Italian sausage, breaking it up with a wooden spoon. Cook for about 5 minutes until browned and no longer pink. Do not drain all the fat; leave about a tablespoon for flavor.
  2. Transfer the browned sausage to a 6-quart slow cooker using a slotted spoon. Add the undrained diced tomatoes and chicken broth. Stir gently.
  3. Do not add the frozen tortellini yet. Cover the slow cooker and cook on LOW for 5 to 6 hours.
  4. About 30 minutes before serving, add the frozen tortellini to the slow cooker. Stir gently.
  5. About 5 minutes before serving, stir in the fresh baby spinach. It will wilt quickly from the heat.
  6. Taste and adjust seasoning if needed. Serve immediately, topped with grated Parmesan cheese and red pepper flakes if desired.

Notes

For a richer flavor, sauté a chopped onion and garlic in the skillet after browning the sausage. For a thicker broth, mash a few cooked tortellini against the side of the slow cooker before adding spinach. To freeze, cook tortellini separately and add when reheating.
