Easy Crockpot White Chicken Chili Recipe with Corn and Lime for Perfect Comfort Meal

A simple and comforting white chicken chili made in the crockpot with tender chicken, sweet corn, and fresh lime for a creamy, flavorful meal perfect for busy weeknights.

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 2 (15 oz) cans white beans, drained and rinsed (cannellini or great northern beans)
  • 1 (15 oz) can corn kernels, drained (fresh or frozen corn can substitute)
  • 4 cups low-sodium chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 12 jalapeños, seeded and chopped
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika (optional)
  • Salt and pepper, to taste
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped (optional)
  • Optional toppings: shredded cheese, sour cream, avocado slices, tortilla chips

Instructions

  1. Dice the onion, mince the garlic, and chop the jalapeños (remove seeds for less heat). Drain and rinse the beans and corn. If using fresh corn, cut kernels off the cob.
  2. Place the chicken breasts or thighs at the bottom of the crockpot. Scatter the diced onion, garlic, and jalapeños over the chicken. Add the drained beans and corn on top.
  3. Sprinkle the cumin, oregano, smoked paprika, salt, and pepper evenly over the ingredients. Pour in 4 cups of chicken broth, making sure the ingredients are mostly submerged.
  4. Cover and cook on low for about 4 hours until the chicken is tender and easily shredded with a fork. Avoid opening the lid repeatedly.
  5. Remove the chicken pieces carefully with tongs or a slotted spoon onto a cutting board. Use two forks to shred the meat into bite-sized pieces.
  6. Use an immersion blender to puree about 1 to 1 1/2 cups of beans and some broth in the crockpot to create a creamy base. If you don’t have an immersion blender, transfer a portion of the chili into a blender, puree, then return it to the pot.
  7. Add the shredded chicken back into the crockpot and stir well. Squeeze the juice of 1 lime over the chili and stir again to combine.
  8. Taste and add salt, pepper, or more lime juice if needed. Stir in chopped fresh cilantro just before serving.

Notes

Do not brown the chicken beforehand; slow cooking will make it tender. Blend some beans to create a creamy texture without dairy. Add lime juice at the end to preserve brightness. Avoid opening the crockpot lid frequently to maintain heat. For a dairy-free version, omit sour cream or use coconut-based alternatives. Adjust heat by seeding jalapeños or adding extra chili peppers. If chili is too thick, add broth; if too thin, cook uncovered on high for 15-20 minutes to reduce.
