Instructions

  1. Prep the peaches by peeling and slicing into roughly 1/4-inch thick pieces. Place in a large bowl.
  2. Add 1/4 cup granulated sugar, 2 tablespoons brown sugar, lemon juice, cinnamon, nutmeg, cornstarch, and vanilla extract to the peaches. Toss gently to coat. Let sit for about 10 minutes.
  3. Preheat oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish.
  4. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and 2 tablespoons sugar.
  5. Cut cold, cubed butter into the flour mixture using a pastry cutter or two knives until mixture resembles coarse crumbs with pea-sized pieces.
  6. Pour in cold buttermilk and stir gently with a fork until dough just comes together; do not overmix.
  7. Pour peach filling into the prepared baking dish, spreading evenly.
