Instructions

  1. Prep your fruit: Wash, peel, hull, or dice as needed. For the strawberry-orange roll-ups, hull strawberries and juice the oranges fresh. For mango-pineapple, peel and dice the mango and pineapple.
  2. Puree the fruit: Place your prepared fruit in the blender or food processor. Add sweeteners and citrus juice according to the flavor. Blend until the mixture is completely smooth—no chunks. This usually takes about 2-3 minutes on high (about 2 cups puree per batch).
  3. Preheat your oven: Set it to the lowest temperature possible, typically 140°F to 170°F (60°C to 75°C). If your oven doesn’t go that low, set it to the lowest setting and prop the door open slightly with a wooden spoon to allow moisture to escape.
  4. Line baking sheets: Place parchment paper or silicone mats on your baking sheets to prevent sticking.

  6. Dry the fruit leather: Place the trays in the oven. Drying time varies but expect about 4-6 hours. Check every hour after 3 hours. The leather is done when it’s no longer sticky to the touch and peels easily from the paper, but still flexible.
  7. Cool and cut: Let the roll-ups cool completely on the trays. Once cool, peel off the parchment or mat and cut into strips about 1-inch (2.5 cm) wide using a sharp knife or kitchen scissors.
  8. Roll and store: Roll each strip up in wax paper or plastic wrap to keep them from sticking together. Store in an airtight container at room temperature for up to 2 weeks, or freeze for longer storage.
