A quick and easy salmon recipe featuring honey, garlic, and butter baked in foil packets for a moist, flavorful, and comforting dinner.

Ingredients

  • Salmon fillets (about 6 oz / 170 g each, skin-on or off depending on preference)
  • Unsalted butter, softened (2 tablespoons per packet)
  • Honey (1 tablespoon per packet)
  • Garlic cloves, minced (2 cloves per packet)
  • Fresh lemon juice (1 teaspoon per packet)
  • Soy sauce (1 tablespoon per packet)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)
  • Optional vegetables: sliced zucchini, bell peppers, asparagus, cherry tomatoes

Instructions

  1. Preheat your oven to 400°F (200°C). Line your baking sheet with foil or parchment to catch any drips.
  2. In a small bowl, combine 2 tablespoons softened unsalted butter, 1 tablespoon honey, 2 cloves minced garlic, 1 teaspoon fresh lemon juice, and 1 tablespoon soy sauce. Stir until well blended and creamy.
  3. Tear off large sheets of heavy-duty aluminum foil, about 12×12 inches each. Place a salmon fillet in the center of each sheet.
  4. Evenly spoon the honey garlic butter sauce over each salmon fillet, coating the top completely.
  5. If using, scatter thinly sliced zucchini, bell peppers, or asparagus around the salmon.
  6. Fold up the foil sides to create a sealed pouch, leaving a little room inside for air circulation. Pinch edges tightly to avoid leaks but do not crush the salmon.
  7. Place foil packets on the prepared baking sheet and bake in the preheated oven for 15–18 minutes, until salmon is opaque and flakes easily (internal temperature 145°F / 63°C).
  8. Let the packets rest for 2-3 minutes after baking. Carefully open (watch for steam) and sprinkle with freshly chopped parsley before serving.

Notes

Do not overbake the salmon to keep it moist. Use softened butter for better mixing. Seal foil packets tightly but leave room for steam. If garlic is very strong, reduce amount or roast separately for milder flavor. For grilling, cook foil packets over medium heat for 12-15 minutes, turning once.
