Easy Honey Garlic Chicken Thighs in the Crockpot

Tender, flavorful chicken thighs cooked low and slow in a sweet-savory honey garlic sauce. This set-it-and-forget-it recipe is perfect for busy weeknights and always impresses.

Ingredients

  • 2 pounds (900g) boneless skinless chicken thighs
  • 1/3 cup (110g) honey
  • 1/3 cup (80ml) low-sodium soy sauce
  • 4–5 cloves garlic, minced
  • 2 tablespoons (30ml) rice vinegar
  • 1 tablespoon (15ml) toasted sesame oil
  • 2 tablespoons (16g) cornstarch
  • 2 tablespoons (30ml) cold water
  • 3–4 green onions, sliced
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels. Season lightly with salt and pepper.
  2. In a small mixing bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, and sesame oil.
  3. Place chicken thighs in the bottom of a 4-6 quart crockpot in a single layer. Pour sauce mixture evenly over the top, flipping each thigh to coat.
  4. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until chicken is fork-tender.
  5. About 30 minutes before serving, remove chicken thighs to a plate using tongs. Cover loosely with foil.
  6. In a small bowl, whisk together cornstarch and cold water until smooth to make a slurry.
  7. Turn crockpot to HIGH. Pour cornstarch slurry into the cooking liquid and whisk continuously for 2-3 minutes until sauce thickens and turns glossy.
  8. Return chicken thighs to the crockpot and spoon thickened sauce over each piece. Let sit for 5 minutes.
  9. Garnish with sliced green onions and sesame seeds before serving.

Notes

For a gluten-free version, use tamari or coconut aminos instead of soy sauce. For a spicier version, add 1-2 teaspoons sriracha or red pepper flakes. Leftovers keep in the refrigerator for up to 4 days or freeze for up to 3 months.
