  • 2 tablespoons (30 ml) olive oil (extra virgin preferred)
  • 1 teaspoon (2.5 g) garlic powder
  • 1 teaspoon (2.5 g) smoked paprika
  • 1 teaspoon (5 g) salt (kosher or sea salt preferred)
  • ½ teaspoon (1 g) freshly ground black pepper
  • 1 tablespoon (15 ml) apple cider vinegar
  • Optional: a few sprigs fresh thyme or rosemary for garnish or aroma
  • Optional: a pinch of red pepper flakes for heat

Instructions

  1. Pat the chicken breasts dry with paper towels to remove excess moisture. Season both sides with salt, black pepper, garlic powder, and smoked paprika. Let rest for 5 minutes.
  2. In a small mixing bowl, whisk together honey, Dijon mustard, whole grain mustard, apple cider vinegar, and red pepper flakes if using. Set aside.
  3. Heat olive oil over medium heat in a skillet until shimmering but not smoking.
  4. Place chicken breasts in the pan carefully. Cook undisturbed for 5-6 minutes until golden brown. Flip and cook the other side for 4-5 minutes until mostly cooked through.
  5. Pour the honey mustard glaze over the chicken. Use a spoon or basting brush to coat evenly. Reduce heat to low and simmer gently for 3-4 minutes, spooning glaze over chicken occasionally until thickened and caramelized. Watch carefully to avoid burning.
  6. Check doneness with a meat thermometer (165°F / 74°C) or cut into the thickest part to ensure juices run clear and meat is opaque.
  7. Remove chicken from pan and let rest for 5 minutes before slicing.
