  • 2 large lemons
  • 6 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Zest and juice one lemon to get about 1 teaspoon zest and 2 tablespoons juice. Slice the second lemon into thin rounds, about ¼-inch thick, and remove seeds.
  3. In a medium mixing bowl, combine lemon juice, lemon zest, minced garlic, olive oil, honey, dried oregano, salt, and black pepper. Whisk until honey is dissolved.
  4. Add chicken thighs to the bowl and toss to coat evenly. Let marinate at room temperature for 10 minutes (or up to 2 hours in the fridge).
  5. Arrange lemon slices in a single layer in a 9×13-inch baking dish. Place chicken thighs on top of lemon slices, spacing them apart. Pour remaining marinade over chicken.
  6. Bake for 25-30 minutes, until chicken reaches 165°F (74°C) at the thickest part and juices run clear. For extra browning, broil for the last 2 minutes.
  7. Remove from oven and let rest for 5 minutes. Garnish with fresh parsley before serving.

Notes
