  • ¾ cup whole milk (2% works too)
  • ¼ cup unsalted butter, melted and slightly cooled
  • 1 cup shredded mozzarella cheese (low-moisture, part-skim)
  • ½ cup mini pepperonis (plus extra for topping)
  • Extra mini pepperonis for topping (about 24)
  • Extra shredded mozzarella for topping
  • Marinara sauce for dipping

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 24-cup mini muffin tin generously with butter or non-stick spray.
  2. In a medium bowl, whisk together the flour, baking powder, salt, garlic powder, and Italian seasoning until evenly distributed.
  3. In a small bowl, beat the egg lightly with a fork. Add the milk and melted butter (not hot) and whisk until smooth.
  4. Pour the wet mixture into the dry ingredients. Fold gently with a rubber spatula just until no dry flour remains—a few lumps are fine. Do not overmix.
  5. Fold in the shredded mozzarella and ½ cup of mini pepperonis with a few gentle strokes until evenly distributed. The batter will be thick and slightly chunky.
  6. Divide the batter evenly among the 24 mini muffin cups, filling each almost to the top.
  7. Press 2-3 extra mini pepperonis into the top of each muffin and sprinkle a tiny pinch of extra mozzarella on top.
  8. Bake for 10-12 minutes, until golden brown around the edges and the cheese on top is melted and bubbly. A toothpick inserted into the center should come out clean or with a few moist crumbs.
  9. Let the muffins cool in the pan for 2-3 minutes, then gently loosen and transfer to a cooling rack.
  10. Serve warm with warm marinara sauce for dipping.

Don’t overmix the batter—stir just until the flour disappears. Use room temperature ingredients to prevent butter from clumping. Grease the pan well to prevent sticking. Let muffins rest in the pan for 2-3 minutes before removing. For best results, serve warm within 15 minutes of baking. These freeze beautifully: freeze on a baking sheet, then transfer to a freezer bag for up to 3 months. Reheat in a 350°F oven for 5-7 minutes.
