These no-bake peanut butter oat bites are a quick and easy snack made with simple pantry ingredients. Ready in under 10 minutes, they’re perfect for meal prep, post-workout fuel, or a healthy treat.

  • 1 cup old-fashioned rolled oats
  • 1/2 cup creamy peanut butter
  • 1/3 cup honey
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup mini chocolate chips
  • 2 tablespoons ground flaxseed
  • 2 tablespoons chia seeds
  • 1/4 cup unsweetened shredded coconut

Instructions

  1. In a large mixing bowl, combine the peanut butter, honey, and vanilla extract. Stir until smooth and well combined.
  2. Add the rolled oats, salt, and any mix-ins (chocolate chips, flaxseed, chia seeds, coconut). Stir until the oats are evenly coated and the mixture holds together when pressed.
  3. Chill the mixture in the refrigerator for 15-20 minutes to firm up.
  4. Scoop out about 1 tablespoon of the mixture and roll into a smooth ball. Place on a parchment-lined baking sheet or plate.
  5. Refrigerate the rolled bites for at least 30 minutes to set. Store in an airtight container in the fridge.

Notes

For best results, chill the mixture before rolling to prevent sticking. If the mixture is too dry, add a teaspoon more honey or peanut butter. If too wet, add a tablespoon more oats. Store in the fridge for up to two weeks or freeze for up to three months.
