  • 1 cup old-fashioned rolled oats
  • ½ cup vanilla protein powder (whey or plant-based)
  • ¼ cup honey (or maple syrup for vegan option)
  • 1 teaspoon pure vanilla extract
  • Pinch of fine sea salt
  • Optional mix-ins:
  • ¼ cup mini chocolate chips
  • 12 tablespoons chia seeds or flaxseeds
  • ¼ cup dried cranberries or raisins
  • 2 tablespoons shredded unsweetened coconut

Instructions

  1. Gather all ingredients and measure them out.
  2. In a mixing bowl, combine peanut butter, honey, and vanilla extract. Stir until smooth and creamy, about 2-3 minutes. Warm peanut butter slightly if stiff.
  3. Add oats, protein powder, and a pinch of salt to the wet mixture. Stir until a dough-like consistency forms. Adjust by adding oats or protein powder if too sticky.
  4. Fold in any optional mix-ins like chocolate chips, seeds, or dried fruit.
  5. Scoop about 1.5 tablespoons (approximately 30 grams) of mixture and roll into tight balls. Place on a lined baking sheet or plate. Makes about 12 balls.
  6. Chill in the refrigerator for at least 30 minutes to set.
  7. Enjoy immediately or store in an airtight container in the fridge for up to 7 days or freeze for up to 3 months.

Notes

If the mixture is crumbly or dry, add a teaspoon of water or almond milk and mix again. Use room temperature peanut butter and honey for easier mixing. Chilling is essential to help the balls firm up and improve flavor. Rolling gently but firmly prevents stickiness.
