Easy One-Pan Garlic Butter Salmon with Asparagus and Lemon

A quick and easy one-pan recipe featuring garlic butter salmon with asparagus and fresh lemon, perfect for a healthy and flavorful weeknight dinner.

  • 4 salmon fillets (about 6 ounces / 170 grams each), skin-on or skinless
  • 1 bunch asparagus (about 1 pound / 450 grams), trimmed
  • 4 tablespoons unsalted butter (60 grams), divided
  • 4 cloves garlic, minced
  • 1 large lemon, thinly sliced plus juice of half
  • 1 tablespoon olive oil (15 ml)
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse and pat dry the salmon fillets. Trim the woody ends off the asparagus and slice the lemon thinly. Mince garlic and set aside.
  3. Heat the olive oil and 2 tablespoons (30 g) of butter in your oven-safe skillet over medium-high heat until the butter foams and starts to brown lightly.
  4. Season the salmon generously on both sides with salt and black pepper. Place the fillets skin-side down in the pan. Sear for 3-4 minutes without moving.
  5. Flip the salmon gently using tongs and add the minced garlic to the pan, stirring it around quickly for 30 seconds to 1 minute.
  6. Add the asparagus around the salmon in the pan. Dot the remaining 2 tablespoons (30 g) of butter over the asparagus and salmon.
  7. Arrange lemon slices on top of the salmon and asparagus. Squeeze half a lemon’s juice over the whole pan.
  8. Transfer the pan to the preheated oven and roast for 7-10 minutes, depending on salmon thickness, aiming for an internal temperature of 125°F (52°C) for medium-rare.
  9. Remove carefully from the oven and sprinkle chopped parsley on top if using. Let the salmon rest for a few minutes before serving.

Notes

Let salmon sit at room temperature for 15-20 minutes before cooking for even cooking. Avoid overcrowding the pan to ensure crispness. Use a thermometer to check salmon internal temperature (125°F / 52°C) for medium-rare. Watch garlic carefully to prevent burning. For dairy-free, substitute butter with olive oil or vegan butter. You can swap asparagus with green beans, broccolini, baby carrots, or zucchini.
