  • 3/4 cup (180ml) unsweetened almond milk
  • 1 medium fresh ripe peach, diced
  • 1 tablespoon honey, plus extra for drizzling
  • 1 tablespoon chia seeds (optional)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 2 tablespoons Greek yogurt (optional)
  • Pinch of salt

Instructions

  1. Combine dry ingredients: In a mixing bowl, add rolled oats, chia seeds, cinnamon, and a pinch of salt. Stir gently to mix.
  2. Add wet ingredients: Pour in almond milk, vanilla extract, and Greek yogurt if using. Stir until evenly combined.
  3. Prepare the peaches: Dice one ripe peach into small cubes, reserving a few slices for topping if desired.
  4. Mix in peaches and honey: Fold diced peaches and honey into the oat mixture.
  5. Portion into jars: Spoon the mixture evenly into two 8-ounce (240ml) mason jars or containers and seal tightly.
  6. Refrigerate overnight: Place jars in the fridge for at least 6 hours or overnight to allow oats to soak and soften.
  7. Serve: Stir oats gently in the morning, add a drizzle of honey and peach slices on top. Optionally, sprinkle chopped nuts or granola.

Notes

Use rolled oats for best texture; instant oats become mushy. Soak for at least 6 hours for proper softness. Adjust almond milk quantity to preference. Chia seeds add thickness but are optional. Fresh peaches are preferred but canned or frozen can be used. For vegan option, replace honey with maple syrup and Greek yogurt with coconut or oat yogurt. Warm gently if preferred.
