  • 1 cup packed brown sugar
  • 1 1/2 cups boiling water

Instructions

  1. Preheat your oven to 350°F (175°C). Place the 9×13 baking dish in the oven with the butter to melt while it preheats.
  2. Melt the 1/2 cup of butter in the microwave or on the stovetop, or let it melt in the baking dish during preheating.
  3. In a medium bowl, whisk together 1 cup flour, 1 cup granulated sugar, 2 teaspoons baking powder, and 1/2 teaspoon salt.
  4. Add 1 cup milk and 1 teaspoon vanilla extract to the dry ingredients. Whisk until just combined (a few lumps are fine).
  5. Carefully remove the hot baking dish from the oven. Pour the batter directly over the melted butter. Do NOT stir.
  6. Sprinkle the 1 cup of chopped pecans evenly over the batter.
  7. Sprinkle the 1 cup of packed brown sugar evenly over the pecans. Do not stir.
  8. Slowly and evenly pour the 1 1/2 cups of boiling water over the entire dish. Do not stir.
  9. Bake for 45-50 minutes, until the top is golden brown and the center is set but still slightly jiggly.
  10. Let the cobbler cool for at least 15 minutes before serving. Serve warm.

Don’t skip the boiling water step—it creates the gooey caramel layer. Toast pecans for extra flavor. Use room temperature milk. Don’t overbake; center should still jiggle. Let cool 15-20 minutes before serving. For smaller crowds, halve the recipe and use an 8×8 dish, baking 35-40 minutes.
