  • Juice of half a lemon
  • 1 large head of broccoli, cut into bite-sized florets (about 4 cups / 300 g)
  • 2 tablespoons olive oil
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and pepper, to taste
  • Red pepper flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a rimmed sheet pan with parchment paper.
  2. In a bowl, toss broccoli florets with 2 tablespoons olive oil, smoked paprika (if using), salt, pepper, and red pepper flakes (optional). Spread broccoli evenly on one side of the sheet pan.
  3. In a small bowl, whisk together Dijon mustard, honey, olive oil, garlic powder, lemon juice, salt, and pepper until smooth. Adjust sweetness or tanginess to taste.
  4. Pat salmon fillets dry with paper towels. Place fillets skin-side down on the empty side of the sheet pan. Brush each fillet generously with the honey mustard glaze.
  5. Roast in the preheated oven for 12-15 minutes, until broccoli is tender with crispy edges and salmon flakes easily but remains moist. Add 2-3 minutes if you prefer salmon more done.
  6. Optional: Broil for the last 2 minutes for extra caramelization, watching closely to avoid burning.
  7. Serve immediately, spooning any extra glaze from the pan over the salmon.
