  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Juice of 1 lime
  • ¼ cup fresh cilantro, chopped
  • 2 cups cooked rice (white, brown, or cauliflower rice)
  • Flour or corn tortillas (optional, for serving)
  • Toppings: sour cream or Greek yogurt, shredded cheese (cheddar or Monterey Jack), diced avocado, extra salsa

Instructions

  1. Prep the Vegetables: Slice bell peppers and onion into thin strips (about ½-inch wide).
  2. Mix the Spices: In a small bowl, combine chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Layer in the Slow Cooker: Place chicken breasts in the bottom of the slow cooker. Sprinkle spice mixture over chicken, turning to coat. Pile sliced peppers and onions on top. Pour salsa evenly over everything.
  4. Cook Low and Slow: Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until chicken is fall-apart tender.
  5. Shred the Chicken: Remove chicken to a cutting board or bowl. Shred with two forks. If not shredding easily, cook longer.
  6. Combine and Finish: Return shredded chicken to slow cooker and stir into peppers, onions, and juices. Squeeze lime juice over top and sprinkle with cilantro. Stir well.
