Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 2 tbsp unsalted butter
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper, to taste
  • Optional: 1 tbsp honey
  • 3 cups shredded green cabbage
  • 1 cup shredded carrots
  • ½ cup mayonnaise (full-fat recommended)
  • ¼ cup sour cream or Greek yogurt
  • ½ cup crumbled blue cheese
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper, to taste
  • 12 slider buns or small soft rolls (potato buns recommended)
  • Butter for toasting buns (optional)

Instructions

  1. Place chicken breasts or thighs in the slow cooker.
  2. In a small saucepan, melt butter over low heat and stir in buffalo wing sauce, garlic powder, onion powder, salt, pepper, and optional honey.
  3. Pour the sauce mixture evenly over the chicken in the slow cooker.
  4. Cover and cook on low for 5-6 hours or on high for 3-4 hours until chicken is tender and shreds easily.
  5. Shred the chicken directly in the slow cooker using two forks or tongs and mix thoroughly with the sauce. Keep warm.
  6. In a large bowl, combine mayonnaise, sour cream or Greek yogurt, apple cider vinegar, Dijon mustard, salt, and pepper. Whisk until smooth.
  7. Add shredded cabbage and carrots to the dressing and toss gently to coat.
  8. Fold in crumbled blue cheese carefully to keep texture chunky.
  9. Lightly butter the slider buns and toast them in a skillet or oven until golden and warm.
  10. Assemble sliders by piling buffalo chicken on the bottom bun, topping with blue cheese slaw, and capping with the top bun.
  11. Serve immediately while chicken is warm and slaw is crisp.

Notes

Use chicken thighs for juicier meat. Avoid opening slow cooker lid frequently to maintain cooking temperature. Prepare slaw shortly before serving for best crunch. Toast buns to prevent sogginess. Adjust spice level by adding more honey or sour cream for milder flavor or extra hot sauce for more heat. For thicker sauce, simmer shredded chicken uncovered for 10-15 minutes on high.
