  • 8 oz (225 g) sliced turkey breast (preferably nitrate-free, deli-sliced)
  • ½ cup (120 g) hummus (classic or roasted red pepper)
  • 1 cup (120 g) cucumber slices (seedless, thinly sliced)
  • 1 cup (120 g) baby carrots or carrot sticks
  • ½ cup (75 g) seedless red grapes
  • 1 small whole wheat pita or flatbread (optional)
  • Optional add-ons:
  • Handful of mixed greens (arugula or baby spinach)
  • 1 oz (28 g) cheese cubes (cheddar or feta)
  • Olives or pickles

Instructions

  1. Rinse the cucumber and grapes thoroughly. Slice the cucumber thinly (about ¼ inch / 6 mm thick). Peel and cut carrots into sticks about 3 inches (7.5 cm) long. Set aside.
  2. Lay out the turkey slices on a plate and roll them up if desired for easy packing and neat presentation.
  3. Spoon ½ cup (120 g) of hummus into a small container or directly into a compartment in your bento box. Keep sealed if packing for later.
  4. In your lunch container, place the turkey slices in one section. Arrange cucumber slices and carrot sticks in separate compartments to keep them crisp. Add grapes to another section. Fold or cut pita into wedges and tuck it in the box if using.
  5. Add optional extras like mixed greens or cheese cubes if desired.
  6. Give everything a quick once-over to ensure items are secure and won’t squish each other. Pack ice packs if not eating immediately to keep ingredients fresh.

Keep veggies dry to prevent sogginess. Stir hummus with a teaspoon of olive oil or lemon juice if too thick. Pack hummus separately if not eating immediately.
