  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup (226 grams) unsalted butter, softened
  • ¾ cup (150 grams) granulated sugar
  • ½ cup (110 grams) packed brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • ¾ cup (about 120 grams) rainbow sprinkles (jimmies preferred)
  • 1 cup (175 grams) white chocolate chunks or chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch (23×33 cm) baking pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter with granulated sugar and brown sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, then mix in the vanilla extract until the batter is glossy and smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or folding gently until just combined. Do not overmix.
  6. Gently fold in the rainbow sprinkles and white chocolate chunks, being careful not to crush the sprinkles.
  7. Spread the dough evenly into the prepared baking pan.
  8. Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted near the center comes out with a few moist crumbs. The center should look set but still soft.
  9. Let the bars cool completely in the pan on a cooling rack, about 45 minutes.
  10. Cut into approximately 2×2 inch (5×5 cm) squares and serve.

Notes

Use softened butter (not melted) for best texture. Do not overmix after adding flour to avoid tough bars. Use jimmies sprinkles to prevent color bleeding. Tent with foil if edges bake faster than center. Cool completely before cutting to avoid bars falling apart. Store airtight at room temperature up to 3 days or freeze up to 2 months.
