These Buffalo Chicken Lettuce Wraps are a quick, low-carb, and spicy meal featuring shredded chicken tossed in buffalo sauce and served in crisp iceberg lettuce leaves with a creamy ranch-style dressing.

Ingredients

Scale
  • 2 cups cooked chicken, shredded (rotisserie chicken works great and saves time)
  • 1/3 cup buffalo hot sauce (preferably Frank’s RedHot)
  • 1 tablespoon unsalted butter, melted
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 8 large iceberg or butter lettuce leaves, washed and patted dry
  • ½ cup sour cream or Greek yogurt (dairy-free yogurt if needed)
  • 2 tablespoons mayonnaise
  • 1 teaspoon dried dill
  • ½ teaspoon onion powder
  • 1 teaspoon fresh lemon juice
  • Salt and freshly ground black pepper, to taste
  • Optional toppings: thinly sliced green onions, chopped celery, shredded cheddar or blue cheese crumbles

Instructions

  1. Prepare the Ranch-Style Dressing: In a small bowl, whisk together ½ cup sour cream or Greek yogurt, 2 tablespoons mayonnaise, 1 teaspoon dried dill, ½ teaspoon onion powder, and 1 teaspoon fresh lemon juice. Season with salt and pepper to taste. Set aside in the fridge to allow flavors to meld.
  2. Warm and Sauce the Chicken: Heat a large skillet over medium heat. Add 1 tablespoon melted butter and swirl to coat the pan. Add 2 cups shredded cooked chicken, sprinkle with 1 teaspoon garlic powder, salt, and pepper. Toss to warm through, about 3-4 minutes.
  3. Add Buffalo Sauce: Pour 1/3 cup buffalo hot sauce over the chicken. Stir well to coat evenly. Cook for another 2 minutes until the sauce is well absorbed but not too watery. Taste and adjust seasoning if needed.
  4. Prepare Lettuce Leaves: While warming the chicken, rinse 8 large iceberg lettuce leaves and pat dry with paper towels. Arrange on a serving platter for easy assembly.
  5. Assemble the Wraps: Spoon a generous amount of buffalo chicken onto each lettuce leaf. Drizzle with ranch-style dressing. Add optional toppings like green onions, celery, or cheese if using.
  6. Serve Immediately: These wraps are best enjoyed fresh for maximum crunch. If you need to hold them, cover loosely with foil and serve within 30 minutes.

Notes

If buffalo sauce is too spicy, mix in extra melted butter or a splash of honey to mellow the heat. Shredding chicken finely helps sauce cling better and makes wraps easier to eat. Do not overload lettuce leaves to avoid tearing. Warm chicken on medium heat to avoid burning sauce. Chill lettuce leaves before serving for extra crunch. Store chicken and lettuce separately to maintain freshness.
