  • 1 tablespoon chipotle powder (or smoked paprika for milder flavor)
  • 3 tablespoons honey (local, raw preferred)
  • 3 cloves garlic, minced
  • 2 tablespoons fresh lime juice
  • 2 tablespoons olive oil (extra virgin preferred)
  • Salt to taste (about 1 teaspoon kosher salt)
  • Black pepper to taste (about ½ teaspoon)
  • Optional: 1 teaspoon cumin or a pinch of cayenne pepper

Instructions

  1. Trim the pork tenderloin by removing any silver skin or excess fat using a sharp knife. (5 minutes)
  2. In a medium mixing bowl, whisk together chipotle powder, honey, minced garlic, fresh lime juice, olive oil, salt, and pepper. Add cumin or cayenne if desired. Taste and adjust seasoning. (5 minutes)
  3. Reserve about 2 tablespoons of the glaze for basting. Coat the tenderloin evenly with the remaining glaze. Let marinate at room temperature for 15-20 minutes or up to 2 hours in the fridge (bring back to room temp before grilling). (15-20 minutes)
  4. Preheat the grill to medium heat (about 350°F). Lightly oil the grates to prevent sticking. (5 minutes)
  5. Grill the pork tenderloin for 15-20 minutes total, turning every 4-5 minutes to ensure even cooking and caramelization. Baste with reserved glaze during the last 5 minutes. Use a meat thermometer to check for an internal temperature of 145°F for medium doneness. (15-20 minutes)
  6. Remove from grill and tent loosely with foil. Let rest for 5-10 minutes to allow juices to redistribute. (5-10 minutes)
  7. Slice the tenderloin into ½-inch slices against the grain. Drizzle with any leftover glaze if desired. (2 minutes)

Notes

If glaze starts to burn, move pork to indirect heat. Do not skip resting the meat to keep it juicy. Use a meat thermometer for perfect doneness. Can roast in oven at 400°F for 20-25 minutes if no grill is available. Save some glaze for basting near the end of cooking.
