  • 1 ball of store-bought pizza dough (about 12 oz / 340 g)
  • 1 tablespoon olive oil (for brushing the dough)
  • 1 cup cooked chicken breast, shredded (about 150 g)
  • ¼ cup buffalo sauce (about 60 ml)
  • ½ cup shredded mozzarella cheese (about 50 g)
  • ¼ cup shredded cheddar cheese (about 25 g)
  • 2 tablespoons chopped green onions (optional)
  • ¼ cup crumbled blue cheese (about 30 g)
  • 3 tablespoons mayonnaise
  • 2 tablespoons sour cream
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Optional garnishes: fresh parsley or extra green onions, celery sticks on the side

Instructions

  1. In a medium bowl, toss shredded chicken with buffalo sauce until well coated. Set aside (about 5 minutes).
  2. In a small bowl, combine crumbled blue cheese, mayonnaise, sour cream, lemon juice, salt, and pepper. Mix until smooth but still a bit chunky. Refrigerate until ready to use (about 10 minutes).
  3. Heat your grill to medium-high, aiming for around 450°F (230°C). If using a pizza stone, place it on the grill to warm up.
  4. Roll out or stretch the pizza dough on a floured surface into a 12-inch (30 cm) circle. Brush one side lightly with olive oil.
  5. Place the dough oil-side down on the grill. Close the lid and cook for 2-3 minutes until grill marks appear and the dough starts to firm up but is still soft on top.
  6. Brush the top side with olive oil, then flip the dough. Quickly spread the buffalo chicken evenly, followed by mozzarella and cheddar cheese. Close the grill lid.
  7. Grill for another 4-5 minutes or until the cheese is bubbly and the crust is golden brown. Keep an eye on it to avoid burning.
  8. Remove pizza from the grill onto a cutting board. Drizzle generously with blue cheese sauce, sprinkle chopped green onions, and add optional parsley if desired. Slice and serve immediately.
