  • 4 pounds cherry tomatoes, washed and stems removed
  • 810 large garlic cloves, unpeeled
  • 1/4 cup extra virgin olive oil
  • 1 medium onion, finely chopped
  • 1/4 cup fresh basil leaves, chopped
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Arrange the cherry tomatoes in a single layer on the baking sheet. Nestle the unpeeled garlic cloves among them. Drizzle with olive oil and sprinkle lightly with salt.
  3. Roast for 25-30 minutes, stirring halfway through, until tomatoes blister and caramelize and garlic is soft and fragrant.
  4. Remove the garlic cloves from the oven and let cool slightly. Once cool enough to handle, squeeze the softened garlic out of their skins into a large pot.
  5. Add the roasted tomatoes to the pot, along with the chopped onion, fresh basil, black pepper, and red pepper flakes if using.
  6. Bring the mixture to a simmer over medium heat. Cook gently for 20-25 minutes, stirring occasionally, until the onion is tender and flavors meld.
  7. Use a food processor or immersion blender to puree the sauce to your desired consistency.
  8. Stir in the lemon juice and adjust seasoning with additional salt or pepper if needed.
  9. Sterilize canning jars and lids by boiling or dishwasher cycle.
  10. Using a canning funnel, ladle the hot sauce into jars, leaving about 1/2 inch headspace.
  11. Wipe jar rims clean, place lids and rings on, and tighten just until fingertip tight.
  12. Process jars in a boiling water bath for 35 minutes for pints or 40 minutes for quarts, ensuring water covers jars by at least 1 inch.
  13. Remove jars carefully and place on a towel to cool completely. Check seals after 24 hours; refrigerate any unsealed jars and use within a week.

Notes

Do not overcrowd the baking sheet to ensure proper roasting. Adjust sauce texture by blending to preference. Add a pinch of sugar during simmering if sauce tastes too acidic. Lemon juice is essential for safe acidity in canning. Smaller batches can be frozen if canning is not preferred.
