  • 10 medium fresh jalapeños, finely chopped (use gloves if sensitive to heat)
  • 1 medium white onion, finely diced
  • 1 small green bell pepper, finely diced
  • 1 cup apple cider vinegar
  • 3/4 cup granulated sugar
  • 1 tablespoon salt
  • 2 cloves garlic, minced
  • Juice of 1 fresh lime
  • 1 teaspoon mustard seeds (optional)
  • 1/2 cup water

Instructions

  1. Wash the jalapeños thoroughly. Wearing gloves, finely chop them into small pieces. Dice the white onion and green bell pepper into similarly small bits. Mince the garlic cloves.
  2. In a mixing bowl, combine the apple cider vinegar, water, granulated sugar, salt, and mustard seeds. Stir until the sugar and salt dissolve completely.
  3. Add the chopped jalapeños, onion, bell pepper, and garlic to the vinegar mixture. Stir until well coated.
  4. Squeeze fresh lime juice over the mixture and stir once more.
  5. Spoon the relish into a clean glass jar or airtight container, seal tightly, and refrigerate for at least 4 hours, preferably overnight.
  6. Serve chilled or slightly warmed as a topping for sandwiches, grilled meats, or eggs.

Notes

Use fresh lime juice and crisp jalapeños for best flavor. Remove seeds and membranes to reduce heat. Let relish sit at room temperature for 10 minutes before serving if too sharp. Always use a clean spoon to avoid contamination. For a smoky twist, add a few drops of liquid smoke or smoked paprika.
