  • 1 cup fresh corn kernels (about 1 ear) or frozen, thawed
  • 1 cup cherry tomatoes, halved
  • ½ cup red bell pepper, finely diced
  • ¼ cup red onion, finely chopped
  • 1 small jalapeño, seeded and minced (optional)
  • ¼ cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon ground cumin
  • 1 clove garlic, minced
  • Salt and black pepper to taste
  • Optional add-ins: diced avocado, black beans

Instructions

  1. Prepare your ingredients: rinse and drain black-eyed peas if canned. Shave kernels off fresh corn or thaw frozen corn. Halve cherry tomatoes, dice red bell pepper, mince red onion and jalapeño (if using), chop cilantro, and mince garlic.
  2. Make the dressing: whisk together lime juice, olive oil, ground cumin, minced garlic, salt, and black pepper until combined and slightly emulsified. Adjust seasoning to taste.
  3. Combine main ingredients: in a mixing bowl, add black-eyed peas, corn kernels, cherry tomatoes, bell pepper, red onion, jalapeño, and cilantro. Pour dressing over and gently fold together with a spoon or spatula, avoiding crushing the peas or tomatoes.
  4. Chill and rest (optional): cover and refrigerate for at least 30 minutes to let flavors meld, though it can be served immediately if needed.
  5. Final taste check and adjustments: before serving, taste and add more salt, pepper, or lime juice if desired. Stir in diced avocado just before serving if using.

Notes

Do not overmix to keep peas and corn kernels intact. Use fresh produce for best flavor. Chill for at least 30 minutes to meld flavors. Adjust jalapeño amount for desired heat. Store airtight in refrigerator up to 3 days; stir before serving and drain excess liquid if needed.
