A quick and easy summer snack featuring smoky grilled apricot halves topped with creamy honey goat cheese, perfect for light appetizers or casual gatherings.

Ingredients

  • Fresh apricots – halved and pitted (choose ripe but firm apricots for grilling)
  • Goat cheese – about 4 ounces
  • Honey – 2 tablespoons, plus extra for drizzling
  • Olive oil – 1 tablespoon (for brushing apricots before grilling)
  • Fresh thyme – a few sprigs, optional, for garnish
  • Freshly ground black pepper – a pinch
  • Lemon zest – 1 teaspoon, optional

Instructions

  1. Preheat your grill or grill pan to medium-high heat (around 375°F or 190°C). Ensure the grates are clean to prevent sticking.
  2. Rinse and dry the apricots, then slice them in half and remove the pits carefully. Brush the cut sides lightly with olive oil.
  3. Place apricot halves cut side down on the grill. Grill for about 3-4 minutes until char marks appear and apricots soften but hold shape. Flip and grill the skin side for another 2 minutes.
  4. While apricots grill, combine goat cheese and 2 tablespoons honey in a small bowl. Stir until smooth and creamy. Add a teaspoon of warm water or milk if mixture is too thick.
  5. Transfer grilled apricots to a serving plate, cut side up. Spoon a generous dollop of honey goat cheese mixture onto each half.
  6. Drizzle additional honey over the top, sprinkle with freshly ground black pepper, fresh thyme leaves, and lemon zest if using.
  7. Serve immediately warm or at room temperature.
