Fresh Grilled Nectarine Burrata Toast with Honey Drizzle

A quick and easy snack featuring smoky grilled nectarines, creamy burrata cheese, rustic sourdough toast, and a sweet honey drizzle. Perfect for a late-night craving or elegant appetizer.

  • 2 ripe but firm fresh nectarines
  • 4 thick slices rustic sourdough bread (about 3/4 inch thick)
  • Burrata cheese (or fresh mozzarella as substitute), enough to generously top 4 toasts
  • 12 tablespoons wildflower or orange blossom honey per toast
  • Extra virgin olive oil for brushing
  • Pinch of sea salt
  • Fresh basil leaves (optional)

Instructions

  1. Wash and dry nectarines. Slice each into 4-6 thick wedges (about 1/2 inch thick). Lightly brush each slice with olive oil.
  2. Preheat grill pan or cast iron skillet over medium-high heat until hot but not smoking.
  3. Grill nectarine slices 2-3 minutes per side until grill marks appear and fruit softens slightly. Remove and set aside.
  4. Slice sourdough bread into 4 thick pieces (about 3/4 inch thick). Brush both sides lightly with olive oil.
  5. Grill bread slices 2-3 minutes per side until golden brown with crisp edges but still soft inside.
  6. While bread is warm, tear or slice burrata cheese and spread generously over each toast slice.
  7. Arrange grilled nectarine wedges on top of the cheese.
  8. Drizzle 1-2 tablespoons honey over each toast and sprinkle with a pinch of sea salt.
  9. Add fresh basil leaves if using.
  10. Serve immediately while warm.

Notes

Do not overcook nectarines; they should be warm and slightly softened with grill marks but not mushy. Use thick bread slices to hold toppings well. Let burrata sit at room temperature for 15 minutes before assembling for better melting and spreading. Brush olive oil generously to prevent sticking. Optionally add crushed red pepper flakes or balsamic glaze for extra flavor. For dairy-free, substitute burrata with creamy cashew cheese and use vegan bread.
