Instructions

  1. Rinse tomatoes, cucumbers, and herbs under cold water. Slice tomatoes into 1/2 inch thick wedges or rounds, peel and thinly slice cucumber, and roughly chop basil. (About 10 minutes)
  2. Slice sourdough or ciabatta bread into 1/2-inch thick pieces. Toast in toaster or grill pan until golden brown and crispy, about 3-5 minutes per side.
  3. In a small bowl, whisk together 3 tablespoons extra virgin olive oil, 1 tablespoon fresh lemon juice, 1 teaspoon Dijon mustard, and 1 teaspoon honey or maple syrup. Season with salt and pepper to taste and whisk until emulsified (2-3 minutes).
  4. In a large bowl, combine sliced cucumbers, tomatoes, arugula, and red onion if using. Drizzle half the dressing over and toss gently to coat evenly.
  5. If using protein, shred rotisserie chicken or flake canned tuna. Peel and slice hard-boiled eggs if desired.
  6. Spread a generous spoonful of cottage cheese or ricotta on each slice of toasted bread. Pile salad mixture on top, add crumbled feta and chosen protein or eggs. Drizzle remaining dressing over and sprinkle with fresh basil leaves and red pepper flakes if desired.
