  • 3 cups cooked chickpeas (or 2 cans, drained and rinsed)
  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1 small red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup feta cheese, crumbled (optional)
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons freshly squeezed lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Drain and rinse the chickpeas. Optionally, lightly toast them in a dry skillet over medium heat for 5 minutes, stirring frequently.
  2. Dice the cucumber into small, bite-sized pieces. Halve the cherry tomatoes and finely chop the red onion. Chop the parsley leaves finely.
  3. In a small bowl, whisk together the extra virgin olive oil, freshly squeezed lemon juice, minced garlic, dried oregano, salt, and pepper. Adjust seasoning to taste.
  4. In a large mixing bowl, combine chickpeas, cucumber, tomatoes, olives, onion, and parsley. Pour the dressing over and toss gently but thoroughly until evenly coated.
  5. Sprinkle crumbled feta cheese over the salad and toss lightly. Keep feta separate if prepping ahead to prevent softening.
  6. Divide the salad evenly among 4 to 5 meal prep containers. Seal tightly and refrigerate. Consume within 3-5 days for best freshness.

Rinse chickpeas thoroughly to remove canned taste. Avoid overdressing to prevent sogginess. Use fresh lemon juice for best flavor. Toast chickpeas carefully if desired.
