A quick and easy fresh snack perfect for hot summer days, featuring crisp cucumbers, juicy cherry tomatoes, fresh lime juice, and optional feta cheese for a light, refreshing bite.

Ingredients

  • English cucumbers, thinly sliced
  • Cherry tomatoes, halved
  • Fresh lime juice (about 2 tablespoons / 30 ml)
  • Sea salt, to taste (about 1/2 teaspoon / 2.5 ml)
  • Fresh mint leaves, torn (optional)
  • Extra virgin olive oil, a drizzle (about 1 tablespoon / 15 ml)
  • Red chili flakes, a pinch (optional)
  • Feta cheese, crumbled (about 1/4 cup / 30 g, optional)

Instructions

  1. Rinse cucumbers and cherry tomatoes under cold water. Slice cucumbers thinly (about 1/8 inch thickness). Halve the cherry tomatoes.
  2. In a mixing bowl, combine fresh lime juice, extra virgin olive oil, and red chili flakes if using. Whisk lightly to blend.
  3. Add sliced cucumbers and halved tomatoes to the bowl. Sprinkle sea salt over the top and toss gently to coat evenly.
  4. Tear fresh mint leaves into bite-sized pieces and sprinkle over the salad. Toss briefly to combine.
  5. Optionally, crumble feta cheese over the top and toss gently to combine.
  6. Serve immediately or chill in the refrigerator for about 10 minutes to let flavors mingle and cool.

Notes

Do not over-salt early; adjust salt at the end. Pat cucumbers dry if watery to avoid sogginess. Best served fresh; leftovers keep up to 24 hours refrigerated. Toss again before serving leftovers. Fresh lime juice is preferred over bottled for best flavor.
