  • 2 oz bourbon (e.g., Buffalo Trace or Bulleit)
  • 810 fresh mint leaves
  • 0.5 oz simple syrup (homemade or store-bought)
  • 0.5 oz fresh lemon juice
  • 2 oz sparkling water or club soda
  • Ice cubes

Instructions

  1. Slice one ripe peach into chunks and pluck 8-10 fresh mint leaves from the stem.
  2. In a mixing glass, add the peach chunks and mint leaves. Gently muddle to release the peach juice and mint oils without pulverizing.
  3. Add 2 oz bourbon, 0.5 oz fresh lemon juice, and 0.5 oz simple syrup. Stir well to combine.
  4. Fill the glass or shaker with ice cubes. Stir for about 20 seconds if using a mixing glass, or shake gently for about 10 seconds if using a shaker.
  5. Strain the cocktail into a rocks glass filled with fresh ice. Skip straining if you prefer some peach pulp.
  6. Top with 2 oz sparkling water or club soda and stir gently.
  7. Garnish with a few mint leaves (slapped between palms to release aroma) and optionally a peach slice on the rim.

Notes

Use ripe, fragrant peaches for best flavor. Muddle mint gently to avoid bitterness. Fresh lemon juice is preferred over bottled. For a lower sugar version, reduce or omit simple syrup and adjust lemon juice accordingly. Frozen peaches can be used if thawed slightly.
