A refreshing summer salad combining juicy watermelon, salty feta, bright mint, and a tangy-sweet lime honey dressing. Quick and easy to prepare, perfect for light meals or gatherings.

Ingredients

  • 4 cups watermelon, cut into bite-sized cubes
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, roughly chopped
  • Juice of 1 large lime (about 2 tablespoons)
  • 1 tablespoon honey
  • 2 tablespoons extra virgin olive oil
  • Pinch of sea salt
  • Freshly ground black pepper (optional)

Instructions

  1. Rinse the watermelon and pat dry. Cut off the rind and slice the fruit into approximately 1-inch cubes.
  2. Rinse fresh mint leaves under cold water, pat dry, remove from stems, and roughly chop.
  3. In a small bowl, whisk together olive oil, lime juice, honey, sea salt, and black pepper until smooth and slightly thickened.
  4. In a large mixing bowl, gently toss watermelon cubes, crumbled feta, and chopped mint.
  5. Pour the lime honey dressing over the salad and toss gently until evenly coated. Do not overmix.
  6. Taste and adjust seasoning if needed. Serve immediately or chill for up to 30 minutes before serving.

Notes

Use ripe watermelon for best flavor. Toss gently to avoid crushing watermelon cubes. Make dressing fresh before serving. Adjust salt carefully due to feta’s saltiness. Dressing can be whisked in a jar if no whisk is available. For vegan version, omit feta or use plant-based cheese and substitute honey with maple syrup.
