  • 1/2 cup balsamic vinegar

  • Splash of olive oil (optional)
  • 1216 wooden cocktail skewers or toothpicks, soaked in water for 20 minutes if grilling

Instructions

  1. Prepare the balsamic glaze: Pour 1/2 cup balsamic vinegar into a small saucepan. Add 1 tablespoon honey or brown sugar. Bring to a gentle boil over medium heat, then reduce heat to low and simmer for 8-10 minutes, stirring occasionally, until thickened to a syrupy consistency. Remove from heat and let cool slightly.
  2. Cut the watermelon into 1-inch cubes using a sharp knife. Drain excess juice on paper towels if very juicy.
  3. Cube or crumble the feta cheese into roughly 1-inch pieces to match watermelon size.
  4. Wash and dry whole mint leaves, folding them in half for skewering.
  5. Assemble skewers by threading a watermelon cube, a folded mint leaf, and a feta cube or crumble. Repeat to fill each skewer with 3-4 pieces, ending with watermelon for color.
  6. Place finished skewers on a serving platter.
  7. Drizzle the balsamic glaze over the skewers just before serving. Optionally, add a light drizzle of olive oil for a glossy finish.
  8. Optionally sprinkle flaky sea salt or freshly cracked black pepper for contrast.
  9. Serve immediately for the freshest taste and texture.
