A quick and refreshing summer snack featuring a juicy watermelon base topped with fresh berries, mint, optional feta, and a zesty lime honey drizzle. Perfect for parties or casual get-togethers.

Ingredients

Scale
  • 1 large seedless watermelon (about 68 lbs), sliced into 1-inch thick rounds
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup fresh kiwi, peeled and sliced
  • 1/2 cup fresh mint leaves, roughly chopped
  • 1/2 cup crumbled feta cheese (optional)
  • 1/4 cup raw honey
  • 2 tablespoons freshly squeezed lime juice (about 1 lime)
  • 1 teaspoon finely grated lime zest
  • Pinch of sea salt

Instructions

  1. Prepare the Watermelon Base: Wash the watermelon thoroughly. Slice off the ends to create stable flat surfaces, then cut into 1-inch thick rounds. Trim off the rind carefully, leaving a round disk of juicy watermelon. Set it on your serving platter.
  2. Make the Zesty Lime Honey Drizzle: In a small bowl, whisk together raw honey, lime juice, lime zest, and sea salt until fully combined and glossy. Warm honey slightly if thick.
  3. Prepare the Fruit Toppings: Wash all berries and kiwi thoroughly. Hull and slice strawberries, peel and slice kiwi, and roughly chop mint leaves. Pat fruits dry with a paper towel.
  4. Assemble the Fruit Pizza: Arrange strawberries, blueberries, and kiwi slices evenly over the watermelon base. Sprinkle chopped mint leaves and crumbled feta cheese on top if using.
  5. Drizzle the Lime Honey: Using a spoon or small ladle, drizzle the lime honey evenly over the entire pizza. For a prettier effect, drizzle in a crisscross pattern.
  6. Serve Immediately: Cut into wedges like a traditional pizza using a serrated knife, wiping the blade between cuts if sticky. If prepping ahead, keep drizzle separate and add just before serving.

Notes

Use a ripe but firm watermelon to avoid mushiness. Pat fruit dry to prevent watering down the drizzle. Assemble just before serving for best texture. Optional feta adds a salty contrast; omit for vegan or dairy-free versions. For a smoky twist, lightly grill watermelon slices 1-2 minutes per side before assembling.
