  • 1 ½ cups (135g) rolled oats
  • ½ cup (50g) oat flour (blend rolled oats to make)
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¼ cup (60ml) unsweetened applesauce
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 2 large eggs, room temperature
  • ½ cup (120ml) milk (dairy or plant-based)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with liners or grease it well.
  2. Make oat flour by blending ½ cup (50g) of rolled oats in a blender or food processor until fine and powdery. Set aside.
  3. In a large bowl, combine 1 ½ cups (135g) rolled oats, oat flour, baking powder, baking soda, ground cinnamon, and salt. Whisk gently to distribute evenly.
  4. In another bowl, mash the bananas until smooth but with some texture remaining. Add eggs, applesauce, maple syrup, vanilla extract, and milk. Whisk until well combined.
  5. Pour the wet ingredients into the dry ingredients. Fold gently with a spatula until just combined; a few lumps are fine.
  6. Divide the batter evenly among the 12 muffin cups, filling each about ¾ full.
  7. Bake for 18-22 minutes. Check at 18 minutes by inserting a toothpick; it should come out clean or with a few moist crumbs.
  8. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use ripe bananas for natural sweetness and moisture. Be gentle when folding wet and dry ingredients to avoid tough muffins. Check muffins starting at 18 minutes to avoid overbaking. You can substitute eggs with flax eggs for a vegan version. Oat flour can be made by blending rolled oats. Store muffins in airtight containers for up to 5 days or freeze for up to 3 months.
