A quick, no-cook meal prep lunch featuring sliced turkey, sharp cheddar, crisp vegetables, and a Dijon mustard vinaigrette, designed to stay fresh and crunchy for days.

  • 46 oz sliced turkey breast (low-sodium, nitrate-free)
  • Sharp cheddar cheese, cubed or sliced
  • 1 English cucumber, sliced into half-moons
  • 1 cup cherry or grape tomatoes, halved
  • Romaine or butter lettuce, torn into bite-sized pieces
  • 1 avocado, sliced (optional)
  • Whole grain crackers (or gluten-free alternative)
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste
  • Lemon juice (for avocado preservation)

Instructions

  1. In a small jar, combine olive oil, apple cider vinegar, Dijon mustard, salt, and pepper. Shake vigorously until emulsified to create the vinaigrette.
  2. Wash and thoroughly dry the cucumbers and lettuce to ensure crispness. Slice the cucumber and halve the tomatoes. Tear the lettuce into bite-sized pieces.
  3. Fold or roll the turkey slices into neat stacks. Cube the cheddar cheese into 1-inch pieces.
  4. Assemble the bento box: Place the vinaigrette in a separate small container or divider. Add lettuce to one compartment, cucumbers and tomatoes to another, and turkey and cheese to a third. Add crackers to a dry section.
  5. If using avocado, add it last and sprinkle with lemon juice to prevent browning.
  6. Seal containers tightly and refrigerate. Add dressing immediately before eating to maintain texture.

Notes

Keep wet ingredients like tomatoes and cucumbers separate from dry crackers to prevent sogginess. Store dressing separately and add right before eating. This meal is best eaten cold or at room temperature; do not microwave as it will wilt the lettuce and rubberize the turkey. Can be stored in the fridge for 3-4 days.
