  • 1 cup plain, non-fat Greek yogurt
  • 1/2 cup pure maple syrup
  • 1/4 cup vegetable oil
  • 1 cup 100% pure pumpkin puree

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line the bottom with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, pumpkin pie spice, and salt until evenly distributed.
  3. In a large bowl, whisk the eggs until beaten. Add the Greek yogurt, maple syrup, vegetable oil, and pumpkin puree. Whisk vigorously until the mixture is smooth and well combined.
  4. Pour the dry ingredients into the wet ingredients. Use a spatula to gently fold them together until the flour just disappears. Do not overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle with nuts or chocolate chips if desired.
  6. Bake for 50-60 minutes. If the top browns too quickly, tent with aluminum foil after 40 minutes. The bread is done when a toothpick inserted into the center comes out clean.
  7. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Ensure eggs and yogurt are at room temperature for best texture. Do not use pumpkin pie filling; use 100% pure pumpkin puree. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months. The bread tastes better on the second or third day as flavors meld.
