  • 1 tablespoon olive oil (to keep pasta from sticking)
  • Salt, to taste (for boiling water)
  • 1 tablespoon olive oil

  • 2 cloves garlic, minced
  • 1 medium carrot, peeled and shredded
  • 1 small zucchini, grated
  • 1 cup fresh spinach leaves, roughly chopped (or frozen, thawed and drained)
  • 1 (14-ounce/400-gram) can crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon sugar or honey
  • Salt and freshly ground black pepper, to taste
  • Optional: Red pepper flakes
  • Optional: Grated Parmesan or nutritional yeast for topping
  • Optional: Fresh basil leaves for garnish

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add 8 ounces (225 grams) of whole wheat or gluten-free pasta and cook according to package instructions until al dente, usually 8–10 minutes. Stir occasionally to prevent sticking. Drain and toss with 1 tablespoon olive oil to keep it from clumping. Set aside.
  2. While pasta cooks, finely chop 1 small onion and mince 2 garlic cloves. Peel and shred 1 medium carrot, grate 1 small zucchini, and roughly chop 1 cup fresh spinach leaves (or thaw and drain frozen spinach).
  3. Heat 1 tablespoon olive oil in a medium saucepan over medium heat. Add onion and garlic, sautéing until fragrant and translucent, about 3–4 minutes. Add shredded carrot and zucchini, stirring for another 4–5 minutes until veggies soften.
  4. Stir in 1 cup crushed tomatoes, 1 tablespoon tomato paste, dried oregano, basil, and 1/2 teaspoon sugar or honey. Season with salt and black pepper to taste. Reduce heat to low and simmer gently for 10 minutes, stirring occasionally.
  5. Add chopped spinach and cook for 2–3 minutes until wilted.
  6. Remove saucepan from heat. Use an immersion blender to puree the sauce until smooth and creamy. If you don’t have one, carefully transfer sauce to a blender in batches.
  7. Pour the smooth marinara sauce over the cooked pasta and stir gently to coat all pieces evenly.
  8. Preheat your thermos with boiling water for 5 minutes, then empty it. Fill the thermos with the warm pasta mixture, seal tightly, and pack for school or work.
