Healthy Turkey Chili for Game Day

A hearty, flavorful turkey chili that is perfect for game day or weeknight dinners. This recipe uses lean ground turkey, kidney and black beans, and a blend of spices to create a comforting, nutrient-dense meal that is easy to make and feeds a crowd.

  • 1.5 lbs (680g) lean ground turkey (93% lean)
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 2 large bell peppers (red and green), diced
  • 2 cans (28 oz each) crushed or diced tomatoes (low-sodium)
  • 2 tablespoons tomato paste
  • 2 cans (15 oz each) kidney beans and black beans, rinsed and drained
  • 1 cup (240ml) low-sodium chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Dice the onions and bell peppers into uniform pieces and mince the garlic.
  2. Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onions and bell peppers, cooking for 5-7 minutes until soft and translucent.
  3. Add minced garlic to the pot and cook for 1 minute until fragrant.
  4. Push vegetables to the side and add ground turkey. Break it up with a wooden spoon and cook for 5-8 minutes until no longer pink. Drain excess fat if necessary.
  5. Sprinkle chili powder, cumin, and smoked paprika over the meat and vegetables. Stir constantly for 1 minute to toast the spices.
  6. Add tomato paste, crushed tomatoes, and chicken broth. Stir well to combine, scraping up browned bits from the bottom of the pot. Bring to a gentle boil.
  7. Stir in the rinsed kidney and black beans. Reduce heat to low and partially cover the pot.
  8. Simmer for 20-30 minutes, stirring occasionally, until the sauce thickens and flavors meld.
  9. Taste and season with salt and pepper as needed.
  10. Remove from heat and let rest for 10 minutes before serving.

Notes

For best results, buy fresh spices as old ones lose potency. Rinsing beans thoroughly reduces sodium. The chili tastes even better the next day as flavors meld. Can be frozen for up to 3 months. Serve with Greek yogurt, avocado, and cilantro.
