  • 3/4 cup granulated sugar (adjust to taste, organic cane sugar recommended)
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract (optional)
  • 1/4 cup water

Instructions

  1. Prep the Peaches (10 minutes): Wash and peel the peaches, pit and chop into roughly 1-inch chunks.
  2. Cook the Peaches (10 minutes): Place peaches, sugar, lemon juice, cinnamon, nutmeg, and water into a large heavy-bottomed pot. Bring to a gentle boil over medium heat, stirring occasionally.
  3. Simmer and Stir (35-40 minutes): Reduce heat to low and simmer uncovered, stirring every 5 minutes to prevent sticking or burning. Add a splash of water if mixture gets too thick.
  4. Puree the Mixture (5 minutes): Remove from heat and puree with an immersion blender to desired smoothness, leaving some texture if preferred.
  5. Add Vanilla and Cool (5 minutes): Stir in vanilla extract, transfer to clean jars, and let cool to room temperature before sealing and refrigerating.

Notes

Use ripe but firm peaches for best texture. Stir often and keep heat low to avoid burning. Adjust sweetness after simmering. If peach butter is too runny after cooling, simmer gently a few more minutes. Vanilla extract is optional but recommended for richer flavor. Can substitute granulated sugar with coconut sugar or natural sweeteners like honey or maple syrup (add near end of cooking).
