Light and Flaky Cranberry Brie Bites: Easy 15-Minute Appetizer

These light and flaky cranberry brie bites come together in just 15 minutes with only four main ingredients. The perfect appetizer for holiday parties, game day snacks, or any gathering, featuring warm melted brie and tart cranberry sauce wrapped in golden puff pastry.

  • 1 package frozen puff pastry sheets, thawed (recommend Pepperidge Farm or Dufour)
  • 8 ounces brie cheese (triple-cream recommended)
  • ½ cup cranberry sauce (whole berry or jellied)
  • 2 sprigs fresh rosemary (optional but recommended)
  • 1 large egg (for egg wash)
  • 1 tablespoon water (for egg wash)
  • Flaky sea salt (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Lightly flour a clean surface and unfold one sheet of thawed puff pastry. Roll out slightly to smooth seams, about 1/8 inch thick. Cut pastry into 12 equal squares, roughly 2 inches each.
  3. Place pastry squares on prepared baking sheet, spacing about 1 inch apart.
  4. Cut brie wheel into 12 small cubes, about ½ inch each. Place one cube in the center of each pastry square.
  5. Spoon about 1 teaspoon of cranberry sauce over each brie cube.
  6. Bring the four corners of each pastry square up to the center, pinching gently to seal into a bundle. If corners don’t stick, dab with a tiny bit of water.
  7. Whisk egg with 1 tablespoon water until smooth. Gently brush tops of each pastry bundle with egg wash.
  8. Strip leaves from fresh rosemary and sprinkle over tops of bites (about ¼ teaspoon total).
  9. Bake for 12-15 minutes until pastry is puffed and golden brown and brie is melted and bubbly.
  10. Let bites rest on baking sheet for 2-3 minutes before serving. Sprinkle with flaky sea salt if desired.

Notes

Keep puff pastry cold for best flakiness. Don’t overfill the pastry squares to prevent sogginess. For make-ahead, assemble bites on baking sheet and refrigerate up to 4 hours before baking, or freeze unbaked for up to 2 months. Reheat leftovers in 350°F oven for 5-7 minutes, not microwave.
