Loaded Crockpot Queso Dip with Chorizo and Jalapeño

A creamy, spicy, and smoky queso dip slow-cooked in a crockpot with chorizo and jalapeños, perfect for parties and easy snacking.

  • 8 ounces (225 grams) raw Mexican chorizo
  • 8 ounces (225 grams) cream cheese, softened
  • 16 ounces (450 grams) Velveeta cheese, cubed
  • 2 medium jalapeño peppers, diced (seeds removed for milder heat)
  • 1 can (10 ounces / 284 grams) diced tomatoes with green chilies
  • 1/2 cup (120 ml) milk (whole or 2%)
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • Salt and black pepper to taste (start with 1/4 teaspoon salt)
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Brown the chorizo in a skillet over medium heat for about 5 minutes, breaking it up with a spoon until fully cooked and slightly crispy. Drain excess fat if needed.
  2. Lightly spray the crockpot insert with nonstick spray or rub with a little oil to prevent sticking.
  3. Place the softened cream cheese, cubed Velveeta, and cooked chorizo into the crockpot.
  4. Stir in diced jalapeños, canned diced tomatoes with green chilies (undrained), onion powder, garlic powder, ground cumin, salt, and pepper.
  5. Add the 1/2 cup of milk to help the cheese melt smoothly.
  6. Mix gently until well combined and cheese cubes are evenly distributed.
  7. Cover and cook on low for 2 to 3 hours, stirring every 30 minutes after the first hour to prevent sticking and encourage even melting.
  8. Once the cheese is fully melted and the dip is creamy, taste and adjust salt or jalapeño heat if needed.
  9. Sprinkle fresh chopped cilantro on top just before serving.

Notes

If dip is too thick, stir in a splash more milk to loosen. If too thin, cook uncovered for 15 minutes to reduce. Stir regularly after the first hour to prevent sticking. Browning chorizo first develops flavor and reduces grease. Remove jalapeño seeds for milder heat or keep for spicier dip. Velveeta cheese melts best for smooth texture. Can substitute with dairy-free cheese alternatives or reduced-fat cheeses for dietary needs.
