  • 1 pound 80/20 ground beef
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup sliced fresh jalapeños
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup mild to medium salsa
  • 2 green onions, sliced
  • 1/2 cup sour cream
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Slice the jalapeños into thin rings and mince the green onions, setting them aside.
  2. Heat a cast-iron skillet over medium-high heat. Add the ground beef, breaking it up with a spatula.
  3. Season the beef with chili powder, cumin, garlic powder, salt, and pepper. Cook for 8-10 minutes until no longer pink, then drain excess fat.
  4. Add the rinsed black beans to the skillet with the beef during the last two minutes to warm through.
  5. Spread the tortilla chips in a single layer on a serving board or baking sheet.
  6. Spoon the beef and bean mixture evenly over the chips.
  7. Sprinkle the shredded cheddar cheese generously over the top.
  8. Melt the cheese by placing the board under a broiler for 2-3 minutes or microwaving for 60-90 seconds until bubbly.
  9. Immediately top with sliced jalapeños, green onions, and dollops of sour cream. Serve with salsa on the side.

For the best texture, serve immediately while the cheese is warm and gooey. If you have leftovers, store in an airtight container in the refrigerator for up to 2 days. Reheat in the oven at 350°F to crisp up chips; avoid the microwave as it makes chips soggy. For a vegetarian option, swap beef for lentils or plant-based meat.
